Lindsey worked at Sensei Farms, the sustainable farming (greenhouse and vertical) startup founded by Dr. David Agus and Larry Ellison, where she gained firsthand experience at the intersection of agriculture, wellness, and technology.

Inspired by her time there, she brought that vision to New York City and in 2022 launched Rainbow Produce, a zero-emissions food cart at the base of the Vessel in Hudson Yards. As the city emerged from the challenges of COVID-19, she helped reenergize the local food scene by serving New Yorkers and visitors fresh fruit and healthy beverages sourced with sustainability in mind.

Her innovative approach to urban wellness and clean food entrepreneurship led to an exclusive invitation from MIT later that year to speak at TEDxBoston, where she shared Rainbow Produce as a zero emissions food cart model for cities around the world.

Lindsey remains passionate about food security and nutrition and volunteers with God’s Love We Deliver in NYC and Brooklyn.
